The aim of this research was to develop a technology for the production of plant-based burgers (PBBs) based on potato protein, also containing high content of iron and appropriately selected fats. The produced PBBs were characterized in terms of their nutritional and bioactive properties both before and after the in vitro digestion process. It was found that the produced burger was characterized by high protein content, ranging from 20.80 to 22.16 g/100 g. It was also shown to have a high dietary fiber content, ranging from 8.35 to 9.20 g/100 g. The main fraction of dietary fiber in the tested samples was insoluble fiber, which accounted for approximately 89% of the total fiber content. In addition, noteworthy is the high digestibility of the protein, reaching approximately 95% for the potato fiber used in the formulation, and about 85% for the oat fiber. Produced PBBs also provide significant amounts of iron, with the use of an organic iron source greatly increasing its quantity in the final product. The analyzed antioxidant properties before and after the digestion process showed a tenfold increase in biological activity after digestion, indicating that the examined PBBs may counteract oxidative stress. Analyzing the chemical and biological properties, it is impossible not to assess consumer attractiveness. It has been shown that PBB1, which contains potato fiber and powdered sprouts enriched with ferritin, received the highest attractiveness ratings among respondents.

At present, flexible sensors are a hot spot in research and experimental development, but the research on flexible sensors that can be used for human motion monitoring still needs to be deepened. In this work, the green material cellulose acetate (CA) was used as the matrix material, the film was made by electrospinning, crushed by a cell grinder and sodium alginate (SA) was added to promote the uniform dispersion of nanofibers in water, and then methyltrimethoxysilane (MTMS) and MXene nanosheet dispersion were added to make it hydrophobic and good conductivity, and the aerogel precursor solution was prepared, and then the CA/SA/MTMS/MXene aerogel with directional holes was prepared by directional freeze-drying. As a flexible sensor material, it can be used for human wear, monitoring the electrical signals generated by the movement of human joints and other parts, and can still maintain a current of about 0.

Recent Findings: Although the literature reports the existence of an inverse relationship between risk of endometriosis and body mass index, clinical evidence jointly reports that a condition of obesity is associated with greater disease severity.

Unlabelled: Although wastewater treatment plants harbor many pathogens, traditional methods that monitor the microbial quality of surface water and wastewater have not changed since the early 1900s and often disregard the presence of other types of significant waterborne pathogens such as viruses. We used metagenomics and quantitative PCR to assess the taxonomy, functional profiling, and seasonal patterns of DNA and RNA viruses, including the virome distribution in aquatic environments receiving wastewater discharges. Environmental water samples were collected at 11 locations in Winnipeg, Manitoba, along the Red and Assiniboine rivers during the Spring, Summer, and Fall 2021.
