The invasive spotted wing Drosophila (SWD) represents new challenges for European and North American fruit producers. The aim of our study was to examine wine grape cultivar susceptibility to this pest and melanogaster-type Drosophila (MTD) by surveying drosophilid populations using field traps and conducting emergence tests. We assessed fly development from intact and artificially injured berries collected from four cultivars.

Red wines produced with interspecific grape cultivars tend to have low tannin concentration and are therefore unbalanced. Extended maceration (EM) is a common winemaking technique which can promote the extraction of tannins from grape skins and seeds. The goal of this study was to evaluate the effect of EM on the tannin concentration, color intensity and other chemical properties of red wines made from cold-hardy grape cultivars.

As an alternative to traditional red wine production during an economic crisis, we investigated the sensory perception and appreciation (liking) of young consumers for organic red grape juice from the Plantet cultivar (Seibel 5455) with or without the addition of sugar or organic acid. This was evaluated through four studies involving panels of young adults with an average age of 22 years. The goal was to determine how adding tartaric acid or hexoses (glucose and fructose) affected hedonic scores as well as gustatory and aromatic attributes.

Our previous study demonstrated a potential strategy for modifying the phenolics profile of Marquette red wines, through the synergistic effect of Accentuated Cut Edges (ACE) and macerating enzymes. This study aimed to investigate the impact of these two winemaking techniques on the microstructure of grape skins and the composition of soluble polysaccharides in Marquette red wines at crushing, bottling, and aging. Even though ACE had no effect on polysaccharide composition, the macerating enzymes significantly altered the mole % of individual monosaccharides and the ratios of arabinose to galactose, rhamnose/galacturonic acid, and (arabinose + galactose)/rhamnose.

Cold-climate wine grapes are produced on 8,000 ha in the North Central region of the United States. Wisconsin has experienced considerable growth, with a 26% increase in acerage since 2017. Chemical management of fungal diseases in cold-climate, interspecific hybrid grapes mirrors that of traditional cultivars despite significant differences in disease susceptibility.
