Based on the newly established high-performance anion exchange chromatography with pulsed amperometric detection (HPAEC-PAD), the saccharides in PM2.5 and PM10 in Beijing from 2011 - 2012 were quantified. Fourteen saccharides were synchronously detected in the aerosols samples in Beijing, which can be divided into three categories, i. e. anhydrosugar, sugar and sugar alcohol. Anhydrosugar, coming from biomass burning, include levoglucosan, mannosan and galactosan. Sugar and sugar alcohol, emitted by the primary biogenic emission, include glucose, fructose, trehalose, arabitol, mannitol, glycerol, threitol, 2-meythltrtols (2-methylthreitol and 2-methylerythrito), xylitol and inositol. The concentrations of monosaccharide anhydrides in summer and autumn were obviously higher than those in spring and winter, while the concentrations of sugar and sugar alcohol in winter were significantly lower than those in other seasons. The results of positive matrix factorization analysis suggested that saccharides compounds in atmospheric PM in Beijing can be derived from biomass burning, suspended soil or dust, isoprene SOA, as well as direct release of airborne fungal spores and pollen.

This study utilized integrated sensory-guided, machine learning, and bioinformatics strategies identify umami-enhancing peptides from , investigated their mechanism of umami enhancement, and confirmed their umami-enhancing properties through sensory evaluations and electronic tongue. Three umami-enhancing peptides (APDGLPTGQ, SDDGFQ, and GLGDDL) demonstrated synergistic/additive effects by significantly enhancing umami intensity and duration in monosodium glutamate (MSG). Furthermore, molecular docking showed that these umami-enhancing peptides enhanced both the binding affinity and interaction forces between MSG and the T1R1/T1R3 receptor system, thereby enhancing umami perception.

Nonreducing disaccharides are prevalent in non-mammalian glycans and glycolipids, serving as pivotal structural components in mycobacterial glycans, microbial oligosaccharide and nucleoside antibiotics, as well as biologically active mimetics of bacterial pathogen-associated molecular patterns (PAMPs). As integral components of PAMPs, 1,1'-linked disaccharide-containing biomolecules play important roles in host-pathogen interactions, cellular signaling, and pathogenesis. Accessing complex biomolecules containing nonreducing disaccharides is often hindered by difficulties in isolating them from natural sources, which can result in impure or degraded products, particularly when sensitive functional groups are involved.
