The uptake and accumulation of essential and toxic elements by wood decay fungi (WDF) are complex. We examined the mineral profile of 13 WDF colonizing coniferous and deciduous trees. To illustrate the role of nutritional strategies and rot type in selected elements uptake and accumulation, four fungi species differing in their nutrition strategy and the type of decay, colonizing only conifers were selected: two white rot: saprotrophic Pseudohydnum gelatinosum, and parasitic Phellinus pini and two brown rot, saprotrophic/parasitic Phaeolus schweinitzii and saprotrophic Tapinella atrotomentosa.

The aim of this study was to assess the toxicity of heavy metals/metalloids, including arsenic, cadmium, lead, and mercury accumulated in the muscle of commonly consumed fish from the Cyprinidae. We discussed the importance of fatty acids in the human diet and investigated their profile in the muscle of different fish species. Additionally, our goal was to evaluate the benefits of fish consumption in relation to its risks, not only by considering the advantages of fatty acids and the drawbacks of heavy metal toxicity but also by examining how these pollutants may alter the fatty acid profile in fish muscle, potentially reducing the quality of their nutritional benefits.

The high-performance liquid chromatography coupled with a diode array detector (HPLC-DAD) was optimized for the simultaneous determination of 11 compounds, belonging to polyphenols (gallic acid and seven catechins) and methylxanthines (caffeine, theobromine, and theophylline). The results obtained for all the validation parameters of the HPLC-DAD method showed that the method is sensitive enough for routine analysis with basic chromatographic equipment, thus it has a significant potential to be highly applicable in common laboratory practice. The method was used in the analysis of 60 green tea infusions originating from four tea-producing countries.

The fruiting body of Neoboletus luridiformis (Scarletina bolete) mushroom was used to determine the level of bioconcentration and subsequent distribution of seventeen elements (Ag, Al, Ba, Ca, Cd, Cr, Cu, Fe, K, Mg, Mn, Na, Ni, Pb, Se, Sr, and Zn). A two-centimeter-thick vertical section of the entire fruit body was divided into 101 partial sub-samples where the contents of the studied elements were determined using ICP OES. The actual distribution of the elements in the fruiting body profile was visualized using a GIS interpolation method resulting in distribution maps.

The fermentation process has been widely used to improve plant-based foods' nutritional and nutraceutical properties. Herein we characterized the bioactive metabolites of the aqueous extract of Kavolì®, a commercial product composed of a mixture of Brassica oleracea leaves, and assessed its potential ameliorating effects in a rat model of non-alcoholic fatty liver disease (NAFLD). Processing is one of the most crucial factors affecting polyphenol content in foods. Therefore, the study is aimed at the evaluation of heat treatment effects (microwaving, steaming, baking, and boiling) on the content of chlorogenic acids, total polyphenols, and antioxidant activity of three varieties of sweet potato with different flesh colors (Beauregard—orange-fleshed, O’Henry—white-fleshed, 414-purple—purple-fleshed).
